This is one of my absolute favorite recipes!! My mom has made these enchiladas for years and we eat'em right up every time!
- 4-5 Chicken breasts or a rotisserie chicken
- 1-2 cans of cream of chicken (depending on how much chicken your're using)
- Sour cream
- Tortillas
- Shredded cheese
- 1 tsp. of chili powder, cumin, and garlic powder
- Salt and pepper to taste
- Green chilies are optional
- Shred the chicken and combine all the ingredients (excepts the cheese) into a bowl
- Scoop the mixture into the tortillas, add cheese on top, and then roll them up.
- Spread out the remaining mixture on top of the tortillas and add more cheese on top.
- Bake at 350 degrees for 25-30 minutes.
